This reciepe is great for making your own bomboniere biscuits for your guests, they cost next to nothing, simple to make and taste delicious.
Cooking time 10-15min Oven temp 180C, 350F
Ingredients 1 (220grams) butter, softened
4 tbsp icing sugar, sifted
1 cup cornflour
1 cup plain flour
1/4 cup butter, softened
1/2 cup icing sugar
2 tsp finely grated lemon zest (optional)
1 tbsp lemon juice
drop of vanilla essence
Place the butter and icing sugar in a bowl and beat until light and fluffy. Sift together the cornflour and flour, and stir into the butter mixture.
Take small pieces of the mixture (approx teaspoon) and roll into balls and place on tray covered with baking paper, about 5cm apart.
Place tray with balls in fridge for 10 mins to set dough.
Take out of fridge and press with back of fork and place in oven and bake for 10-15min or until just golden. Allow the biscuits to cool on tray.
Place the butter in bowl and beat until light and fluffy. Gradually add the icing sugar and beat until creamy. Stir in the lemon zest, juice and splash of vanilla essence. Place small amount of filling in biscuits and sandwich two biscuits together.
