So easy and delicious is this Rocky Road recipe. A great recipe as it can be made up 2-3 days before the wedding.
Resting Time 24 hours
200 g Dark Cooking Chocolate
200g Milk Cooking Chocolate
50g Unsalted Butter
100g Glaced Cherries
50g Macadamia Nuts Crushed
300g Fresh Turkish Delight cut up into smaller pieces
100g Arnotts Choc Ripple Biscuits crushed into pieces
27cm x 18cm baking dish with min 3cm sides
Line a 3cm-deep, 27cm x 18cm pan with plastic wrap.
Place the milk and dark chocolates with the butter in a heatproof bowl in the microwave for no more than a minute at a time (each microwave setting is different so keep watch to not over heat the chocolate) stir until melted.
Stir marshmallows into chocolate with remaining ingredients. (Its up to you if you want to cut up marshmallows and cherries to smaller pieces)
Spread into pan, chill in fridge for a couple of hours or until hard.
Slice Rocky Road in the pan and serve.
Makes approx 18 servings, depends how big you want to cut the pieces
This can be made up to 2-3 days ahead, keep refridgeratored.
Leave in fridge till ready to serve, otherwise it will become messy for guests to handle.
You could place pieces in nice cupcake patty pans to serve for guests.
